Pasta started out as spaghetti as a child, except for Ravioli which started to appear in a tin. But by the time college away from home started it meant that proper pasta was on the menu. With a ragu sauce trying out different pastas became the norm. It was only when mixing 00 flour and eggs and making your own did the idea of stuffing it with spinach and ricotta cheese appear a good idea. I still like the shape of these!
